Crockpot Chicken Tacos – Too Good Not to Share May 31, 2010

These have become a staple in my house. I found it on a message board I frequent and it’s as delicious as it is easy. Can be VERY healthful depending on how crazy you get with the sides.

Crockpot Chicken Tacos
3 frozen chicken breasts
1 package taco seasoning
1 container Trader Joes salsa*

Step 1: Cover bottom of crockpot with taco seasoning.
Step 2: Put frozen chicken breasts over taco seasoning. Stacking is okay.
Step 3: Pour salsa over chicken.

Heat on HIGH for 4 hours, then shred with two forks, turn to LOW and cook for 30 minutes. Perfection.
Servings vary, but I feed 3 people 2 meals with this recipe.

I serve with corn tortillas, guacamole, diced tomato, shredded cheddar and nonfat sour cream.

I’ve heard others top with black beans, corn, onion, etc. Serve in tortillas, over rice, over salad. So flexible.

- can of Rotel
- container of fresh Pico de Gallo
- container of any kind of salsa
